Rigatoni with Chicken

  1. 1 of 3 Bring a large pot of lightly salted water to a boil. Add green beans and red pepper and cook 3 minutes. Remove to a bowl with a slotted spoon. Return water to a boil and add rigatoni. Boil 12 minutes.
  2. 2 of 3 While rigatoni cooks, heat 2 tbsp oil in a large skillet over medium-high heat. Add chicken breasts and saute 3 minutes. Stir green beans and pepper into skillet; cook 2 minutes. Season with salt and pepper. Crumble in Alouette garlic and herb cheese.
  3. 3 of 3 Drain rigatoni, reserving 1/2 cup pasta water. Toss rigatoni in a large bowl with chicken mixture, adding a little pasta water to thin sauce, if desired.
