  1. 1 of 1 Set rack in center of oven. In a large bowl, combine 1 tbsp whole-grain Dijon mustard, 2 tsp maple syrup, 2 cloves chopped garlic, 1/2 tsp dried rosemary and 1/4 tsp each kosher salt and black pepper. Add one 1 1/4 lb pork tenderloin to bowl and coat with mustard mixture. In a large, heavy ovenproof skillet, heat 2 tsp olive oil over medium-high. Brown pork on all sides, 5 minutes. Meanwhile, in an 8-inch square baking pan, place 3 Pink Lady apples, cut into 1/2-inch wedges, 2 tbsp water, 1 1/2 tbsp maple syrup, 1 tbsp butter, cut into pieces, 1 tsp grated ginger and 1/8 tsp kosher salt. Put skillet with pork and pan with apples into oven. Bake apples at 400 degrees for 25 minutes, until tender, and pork for 20 minutes, until it reaches 140 degrees . Let pork rest 5 minutes. Slice and serve with apples on the side.
