  1. 1 of 2 Heat oven to 425 degrees . Rub beets all over with half the oil, then salt generously. Place on a baking sheet and roast until soft all the way through, about 30 to 40 minutes.
  2. 2 of 2 When beets are cool enough to handle, peel and quarter them. Transfer to a bowl with 1/4 cup oil, the red onion, vinegar and sugar. Season with salt and pepper, then toss.
