  1. 1 of 1 Heat oven to 400 degrees . Cut eggplant into 1-inch pieces and spread on a baking sheet; toss with 2 tbsp each olive oil and balsamic vinegar and 1 tsp each salt and herbs de Provence seasoning. Roast at 400 degrees for 15 minutes. Toss 16 grape tomatoes with eggplant and black pepper; roast for an additional 10 minutes. On each of 16 wood skewers, thread 2 pieces of eggplant, 1 tomato, 1 large pitted green olive and 1 bite-size piece of fresh mozzarella. Place on a serving platter and drizzle with 1 tbsp each olive oil and balsamic vinegar.
