  1. 1 of 1 Cut zucchini into 1 1/2-inch pieces and plum tomatoes into quarters. Place on a greased rimmed baking sheet; toss with garlic cloves, olive oil, salt, Italian seasoning and pepper. Roast at 400 degrees for 30 minutes, turning once.
