Rosemary Roasted Sweet Potatoes

Directions

  1. 1 of 1 Cut 3 1/2 lbs peeled sweet potatoes into 1-inch pieces. Toss with 1/2 cup dried cherries, 2 tbsp olive oil, 1 tbsp chopped fresh rosemary, 1/2 tsp salt and 1/4 tsp black pepper. Roast in a shallow pan at 400 degrees for 40 minutes or until tender, turning once. Stir in 1 tbsp unsalted butter. Garnish with more rosemary.
