Maple-Nut Chicken Salad
- 1 of 3 Remove skin from chicken; remove meat from bones and shred (you should have about 1-1/2 cups); discard bones.
- 2 of 3 Toss together the shredded chicken, broccoli coleslaw and black-eyed peas.
- 3 of 3 Whisk together maple syrup, vinegar, oil, mustard, salt and pepper in small bowl. Pour over salad; toss to combine. Add almonds just before serving.
