Mixed Bean Salad

  1. 1 of 3 Whisk together oil, juice, vinegar, cumin, salt and hot pepper sauce in large bowl until well blended.
  2. 2 of 3 Stir black beans, white beans, corn, sweet red or green pepper, ham if using, and onion into the dressing; toss together until all the ingredients are well coated. Serve immediately or refrigerate, covered, for several hours or until well chilled.
  3. 3 of 3 To serve, spoon salad over bed of lettuce leaves. Makes 4 servings.
