Directions

  1. 1 of 3 Place carrots in medium-size bowl.
  2. 2 of 3 Whisk oil, lime juice, cumin, ginger, salt and pepper in small bowl. Add to carrots; toss to coat. Cover and refrigerate 2 hours or overnight.
  3. 3 of 3 Mound carrot salad over spinach leaves on serving platter. Makes 6 servings.
