Prepare dressing:

  1. 1 of 1 Puree orange juice, peanut butter, garlic, vinegar, ginger, orange rind, green onion, mint, red-pepper flakes, soy sauce, honey and sesame oil in blender. Whirl until smooth.

Prepare salad:

  1. 1 of 1 Combine shrimp, spinach, rice, orange and red pepper in bowl. Add dressing and salt. Garnish with mint and sesame seeds. Makes 4 servings.
