  • Heat oil in a medium Dutch oven over medium-high. Add the sausage, onion and garlic, and cook until sausage is cooked through, about 7 minutes.

  • Stir in chicken broth, tomatoes, Italian seasoning and crushed red pepper, if using, scraping up any browned bits on bottom of pot. Cover, increase heat to high, and bring to a boil.

  • Add the tortellini and kale, and cook 5 minutes (or according to tortellini directions). Makes about 10 cups.
