Sausage and Tortellini Soup
Heat oil in a medium Dutch oven over medium-high. Add the sausage, onion and garlic, and cook until sausage is cooked through, about 7 minutes.Advertisement
Stir in chicken broth, tomatoes, Italian seasoning and crushed red pepper, if using, scraping up any browned bits on bottom of pot. Cover, increase heat to high, and bring to a boil.
Add the tortellini and kale, and cook 5 minutes (or according to tortellini directions). Makes about 10 cups.
