Sausage and Tortellini Soup

  1. 1 of 3 Heat oil in a medium Dutch oven over medium-high. Add the sausage, onion and garlic, and cook until sausage is cooked through, about 7 minutes.
  2. 2 of 3 Stir in chicken broth, tomatoes, Italian seasoning and crushed red pepper, if using, scraping up any browned bits on bottom of pot. Cover, increase heat to high, and bring to a boil.
  3. 3 of 3 Add the tortellini and kale, and cook 5 minutes (or according to tortellini directions). Makes about 10 cups.
