Scallion Mashed Potatoes
- 1 of 1 Peel 2 3/4 lbs russet potatoes and cut into 2-inch pieces. Place in a large pot and add enough cold water to cover. Bring to a boil over high heat, add 1 tsp salt and cook 10 to 12 minutes, until tender. Drain and return to pot. Meanwhile, heat 3 tbsp salted butter in a large skillet over medium-high. Add 1 trimmed and sliced bunch of scallions (6 to 8) and 3 cloves sliced garlic. Cook 4 minutes, stirring. Add 1 cup milk, 1 tbsp salted butter and 1/2 tsp each salt and black pepper to potatoes. Mash to desired consistency; add scallion mixture.
