Baked Fish Fillets
- 1 of 4 If serving same day, heat oven to 450 degrees F. Grease a large baking sheet.
- 2 of 4 Mix together cornflake crumbs, cornmeal, Parmesan cheese, salt, black pepper and red pepper in shallow dish. Whisk eggs whites in a second dish until frothy.
- 3 of 4 Dip fish fillets in egg white, then in cornflake crumb mixture to coat evenly all over. Place on prepared baking sheet.
- 4 of 4 Bake fillets in 450 degrees F oven for 8 minutes; turn fillets over. Bake another 10 to 12 minutes or until fillets are crispy on outside and cooked through in center. Place under broiler 1 minute to crisp, if necessary. Cut each fish fillet in half for total of 6 portions.
