  • Combine basil, garlic, oil, rind, juice, salt and pepper in blender. Whirl until smooth paste. Spread half of basil mixture over salmon; reserve remaining half for basting. Turn salmon over to coat well. Marinate the salmon in the basil mixture for 30 minutes, turning after 15 minutes.

  • Prepare outdoor grill with hot coals, or heat gas grill to hot, or heat oven broiler. Grill salmon, basting with reserved marinade, for 4 to 5 minutes per side or until opaque in center. Transfer fish to plates. Serve with Spicy Corn Relish.
