Gary Willis's Fried Fish
- 1 of 2 Combine cornmeal, flour, salt, lemon peel, garlic powder, cayenne pepper and black pepper in large bowl. Dredge fish fillets in cornmeal mixture to coat all sides.
- 2 of 2 Heat oil in heavy, deep skillet or deep-fat fryer until oil registers 375 degrees F. Add a few fish fillets to hot oil, without crowding pan; brown on both sides, 5 or 6 minutes. Remove fish with slotted spoon to paper toweling to drain. Repeat to cook all fish.
