Seafood Skillet

  1. 1 of 2 Cook bacon in large nonstick skillet over medium heat, 4 minutes. Add garlic, scallops and shrimp; cook over medium-high heat, 4 minutes. Add coconut water, water, chicken bouillon granules, salt and red-pepper flakes. Bring to boiling. Add frozen mixed peppers; simmer 3 minutes. Stir in instant rice; cover and remove from heat. Let stand, stirring occasionally, 5 minutes or until liquid is absorbed. Makes 6 servings.
