Shrimp Quesadillas

  1. 1 of 3 Place rack in the lowest position in oven. Heat the oven to 450 degrees F. Arrange 4 tortillas on large foil-lined baking sheet. Lightly coat the tortillas with nonstick cooking spray; flip over.
  2. 2 of 3 Sprinkle half of cheese over tortillas. Sprinkle with shrimp, red pepper, green onion, jalapeno and cumin. Top with remaining cheese, then tortillas. Coat with nonstick cooking spray.
  3. 3 of 3 Bake on the bottom rack in 450 degree F oven for about 10 minutes, flipping over halfway through cooking, or until the cheese is melted and the tortillas are crisped. Cut into wedges. Then serve with sour cream and salsa. Makes 4 servings.
