Shanghai-Style Dan Dan Noodles
Heat oil in a large skillet. Add pork, ginger, scallions, garlic, sugar and red pepper. Simmer 8 minutes, stirring occasionally, until pork is cooked through. Stir in soy sauce and juice and zest of lime. Meanwhile, cook fettuccine following pkg directions (about 12 minutes); drain, reserving 1 cup pasta water. Toss fettuccine with pork mixture and enough reserved pasta water to create a sauce. Top with cucumber and peanuts.Advertisement
For a more authentic taste, try Chinese egg noodles or rice noodles in place of the fettuccine.
