Shaved Butternut Squash with Asiago Dressing

  1. 1 of 1 In a small bowl, whisk 1/2 cup Fage Total Greek yogurt, 1/4 cup buttermilk, 2 tbsp white wine vinegar and 1/4 tsp each salt and black pepper. Stir in 1/2 cup shredded Asiago cheese. Peel a medium butternut squash and trim both ends. Using a vegetable peeler, shave long pieces of squash into a large bowl until you reach the core. Discard seeds and pulp. Toss squash with 1/3 cup each thinly sliced shallots, sunflower seeds and chopped fresh parsley, 1/2 tsp salt and 1/4 tsp black pepper. Drizzle dressing on top. Toss just before serving. Serve with more Asiago, if desired.
