• Heat oven to 400°. Arrange chicken on one side of a rimmed baking sheet. Drizzle with 1 tbsp veg oil and sprinkle with 1/4 tsp salt. Roast 20 min.

  • Meanwhile, toss broccoli rabe with 2 tbsp veg oil and 1/4 tsp salt. Arrange on a second rimmed sheet pan. Trim ends of polenta and slice lengthwise into 4 planks. Sprinkle with Parmesan and add black pepper to taste.

  • Remove chicken from oven. Spoon 1 tbsp prepared pesto over each breast. Add polenta to pan. Return chicken to oven along with broccoli rabe. Roast until chicken is cooked through, 20 min more. Serve chicken with polenta and broccoli rabe.
