Shrimp and Grits Skewers
- 1 of 3 Heat broiler to high. In a large saute pan, cook bacon over medium heat 3 to 5 minutes, until crispy. Remove bacon to a paper-towel-lined plate with a slotted spoon. Carefully reserve 2 tbsp of the bacon fat.
- 2 of 3 Thread 2 shrimp and 2 cubes of polenta onto each of the skewers. Place on a baking sheet and brush both sides with reserved bacon fat. Season with salt and pepper.
- 3 of 3 Broil skewers on the highest oven rack 3 minutes, until shrimp are cooked. Garnish with crispy bacon and sliced scallions.
