• Heat EVOO in a large skillet over med-high. Add bell pepper, celery, onion, and garlic. Cook, stirring, 4 min. Add turkey kielbasa and cook 3 min. Stir in shrimp, smoked paprika and salt. Cover and cook 3 min, then stir in hot rice and cook 1 min. Prep Ahead: Chop celery, slice onion and garlic, and core and slice peppers. Combine in a large airtight container (they all cook for the same amount of time).
