Shrimp Pita Pizzas
Wrap pitas in foil and warm in 350° oven while cooking shrimp.Advertisement
Make a dressing: Combine yogurt, oil, vinegar, 1/8 tsp pepper and the salt in a small bowl. Whisk until smooth.
In a medium bowl, toss shrimp with 3 tbsp dressing. In a second bowl, toss spinach with 1/4 cup dressing.
Heat a grill pan or large cast-iron skillet over medium-high. Add shrimp and cook 1 to 2 minutes. Flip and cook 1 to 2 minutes more, until cooked through. Remove to a clean bowl and toss with remaining dressing.
Spread hummus on warm pitas. Top with spinach and shrimp. Sprinkle with 1/8 tsp pepper.
Feel free to use flavored hummus, such as roasted red pepper or roasted garlic.
