Shrimp Salad Rolls

Toss the salad together a few hours ahead, then add dressing and fill rolls just before serving.

  1. 1 of 2 In a large bowl, gently stir shrimp, avocado, tomatoes and scallions.
  2. 2 of 2 In a small bowl, whisk oil, lemon peel and juice, salt and pepper. Drizzle over shrimp mixture and stir to blend. Divide shrimp salad evenly among buns (about 1/3 cup in each); serve with coleslaw.
