Smashed Peas with Halibut
- 1 of 2 Combine peas and 1/4 cup water in a skillet. Simmer 2 minutes. Add 1 tbsp oil and shallot; cook 2 minutes. Transfer to a food processor with basil and blend until well combined but still has texture. Return to skillet and stir in butter, 1/2 tsp salt and 1/4 tsp pepper.
- 2 of 2 Heat 2 tbsp oil in a large skillet over medium-high heat. Season halibut with 1/2 tsp salt and 1/8 tsp pepper. Add to skillet skin side up. Cook 4 minutes; flip and cook 3 to 4 minutes. Serve over peas.
