• Heat oven to 400 degrees. Spread bread cubes on 2 baking sheets. Bake at 400 degrees for 5 minutes, toss, then bake another 5 minutes or until lightly browned. Transfer to a large bowl.

  • In a skillet, heat oil over medium-high heat. Add sausage, breaking up with a spoon. Cook 5 to 7 minutes, until browned. Reduce heat to medium. Stir in dates, walnuts, onion and garlic. Cook 5 minutes. Stir in stock, 1/4 cup of the Parmesan, the parsley, thyme, salt and pepper. Transfer to a 13 x 9 x 2-inch baking dish and press down with a spatula. Scatter remaining 1/4 cup Parmesan over top.

  • Cover dish with foil. Bake at 400 degrees for 20 minutes. Uncover; bake 5 minutes more.
