  • Combine carrot, radish, vinegar, sugar and salt. Cover and refrigerate 1 hour. Combine chicken, juice, soy sauce, ginger, garlic and fish sauce. Form into 4 patties and refrigerate 30 minutes. Cook in a nonstick skillet over medium-high 4 minutes per side, until cooked through. Spread 1 1/2 tsp mayonnaise on each bun; place a burger on each and top with cucumber and cilantro.
