  1. 1 of 3 In a large nonstick skillet, heat 1 tbsp olive oil over medium heat. Stir in baby spinach and cook 2 minutes, until wilted.
  2. 2 of 3 Whisk eggs in a bowl with scallions, cilantro, chili powder, salt and pepper. Pour into skillet with spinach and stir 2 minutes, until cooked.
  3. 3 of 3 Distribute eggs, beans, Monterey Jack and salsa among warmed tortillas. Roll burrito-style and serve immediately.
