Spaghetti with Ham and Eggs

Bring a large pot of salted water to a boil. Add spaghetti and cook 9 minutes. Drain, reserving 3/4 cup pasta water. Meanwhile, sauté ham in 1 tbsp butter in a large skillet over medium-high for 2 minutes. Remove to a plate. Add 2 tbsp butter to skillet and crack in eggs. Fry over medium for 3 to 4 minutes, until whites are set. Gently flip eggs and remove from heat. Place spaghetti and ham in a large bowl. Place eggs on top of pasta and cut into strips with a serrated knife. Toss everything together, along with reserved pasta water, grated Parmesan, salt and cracked black pepper.

Skip the ham and add 2 more eggs plus a green veggie like asparagus or broccoli.
