  1. 1 of 3 Place potatoes in a lidded pot. Fill with cold water until potatoes are covered by 1 inch. Cover pot and bring to a boil. Reduce heat to a simmer and cook 10 minutes, until fork-tender.
  2. 2 of 3 Meanwhile, heat a saute pan over medium. Cook chorizo 3 to 5 minutes, until crispy.
  3. 3 of 3 Drain potatoes and return to pot immediately; mash. Stir in three-fourths of the crispy chorizo, the buttermilk, butter and salt. Scatter remaining chorizo and cilantro on top.
