• Heat oven to 450°. On a large rimmed baking sheet, rub chicken with 2 tbsp oil, shawarma seasoning, 1/2 tsp salt and 1/4 tsp black pepper. Add a few lemon and/or orange slices to one side of pan.

  • Spread sweet potatoes on a second large rimmed baking sheet and toss with 3 tbsp veg oil, 1/2 tsp salt and 1/4 tsp black pepper. Roast chicken and sweet potatoes 25 min. Remove citrus slices from pan and cut in half. Check chicken temp (should be 165°) and potatoes. If either needs more time, return to oven for 5 min. Remove sweet potatoes to a platter.

  • Broil chicken 3 minutes to brown. Serve chicken over arugula with sweet potatoes and citrus. Serve with roasted broccoli if desired and your favorite dressing or dipping sauce.
