Spicy Collard Greens

  1. 1 of 1 Remove and discard stems from 2 large bunches collard greens; roughly chop leaves. Heat 2 tbsp extra-virgin olive oil over medium. Add 1/2 thinly sliced red onion; cook 5 minutes. Stir in 2 cloves chopped garlic and 1/4 tsp red pepper flakes; cook 1 minute. Increase heat to medium-high, stir in collards and cook 12 minutes, until tender. Add 2 tbsp cider vinegar and 3/4 tsp salt.
