  1. 1 of 1 In a large skillet, heat 3 tbsp vegetable oil over medium-high. Add 2 thinly sliced medium onions and cook 3 minutes. Add 3 1/2 lbs sweet potatoes, peeled and cut into 1 1/2-inch pieces; cook, stirring occasionally, 10 minutes. Stir in 2 cups water, 1 cup golden raisins, 2 tbsp packed light brown sugar, 1 1/2 tsp salt, 1 tsp ground ginger, 1/2 tsp cinnamon and 1/4 tsp cayenne. Cook, covered, over medium for 12 minutes, until tender, stirring occasionally.
