  1. 1 of 4 Heat oven to 375 degrees . Place spinach in a clean kitchen towel and squeeze over sink to remove as much liquid as possible.
  2. 2 of 4 Heat a skillet over medium. Add bacon and cook 6 to 8 minutes, until crispy. Remove to a plate, reserving 2 tbsp bacon fat.
  3. 3 of 4 Brush a 13 x 9-inch baking dish with 1 tbsp bacon fat. In a large bowl, mix 1 tbsp bacon fat with flour and next 5 ingredients until well combined. Stir in spinach, scallions, cheese and bacon. Spread into greased baking dish. Bake 30 to 35 minutes, until top starts to turn golden brown.
  4. 4 of 4 Cool slightly, then cut into triangles. Serve warm or at room temperature.
