  • Melt 3 tbsp salted butter in a skillet over med-high. Season beef filets with salt and pepper. Add to pan; cook 8 min, turning once, for medium-rare. Remove to a plate; keep warm. Add shallot to pan; cook 1 min. Add broth and wine. Simmer 5 min, until reduced, scraping brown bits from pan bottom. Add peppercorns to pan along with heavy cream. Reduce heat to medium; cook 2 min. Spoon over steaks; serve with fries.
