Curried Chickpea Stew

  1. 1 of 2 Cook onion in oil in large saucepan, stirring, 5 minutes. Add garlic, peppers and potatoes; cook 3 minutes. Stir in curry; cook 1 minute. Add broth, chickpeas, tomato, salt and pepper; cook, uncovered, 15 minutes or until potatoes are tender.
  2. 2 of 2 Stir in raisins and peanuts. Serve over rice if desired.
