Stuffed Mac and Cheese

  1. 1 of 2 Bring a large pot of salted water to a boil. Add the cavatappi and cook 7 min. Drain. Meanwhile, melt the butter in a large pot over medium. Sprinkle in the flour and cook 1 min, stirring constantly. Whisk in the milk, onion powder, salt and pepper. Bring to a simmer; cook 2 min, whisking occasionally. Remove from heat and whisk in 2 cups cheddar.
  2. 2 of 2 Stir cooked pasta into cheese sauce. Spoon half the pasta into a greased 3 qt baking dish. Top with one of the fillings (see Super Stuffers) and remaining pasta. Scatter 1 cup cheddar on top. Heat broiler. Broil until cheese is melted and lightly browned, 4 min.

Super Stuffers

  1. 1 of 3 Meat Sauce: Saute 1 lb lean ground beef, breaking apart, for 5 min. Drain off fat and stir in 1 cup jarred marinara plus a pinch of salt and pepper.
  2. 2 of 3 Mushroom: Melt 2 tbsp butter in a large skillet over medium. Add two 8 oz pkg sliced mushrooms and 1 tbsp minced dried onion; cook 4 min. Season with 1/2 tsp salt and 1/4 tsp pepper.
  3. 3 of 3 Broccoli: Heat 2 tbsp olive oil in a large nonstick skillet. Add one 12 oz bag frozen chopped broccoli, thawed, and 2 cloves garlic, chopped. Cook 3 to 4 min. Season with salt, pepper and a pinch of red pepper flakes.
