Tagliatelle with Heirloom Tomatoes, Mushrooms and Chicken
- 1 of 4 In a large nonstick skillet, heat oil over medium-high heat. Add mushrooms and cook 1 minute, stirring frequently. Add chicken, garlic, 1/2 tsp of the salt and the black pepper; cook 5 minutes, stirring occasionally. Add tomatoes and cook 1 minute to heat through.
- 2 of 4 Meanwhile, cook pasta following package directions, about 8 minutes. Drain and reserve 1/2 cup pasta cooking water.
- 3 of 4 In a large serving bowl, toss cooked pasta with chicken and tomato mixture. Add pasta water if needed to create a sauce. Season with remaining 1/2 tsp salt.
- 4 of 4 Place burrata on top of pasta and cut into large pieces with 2 knives. Toss, season with freshly cracked black pepper and garnish with basil. Serve immediately.
