  2. 2 of 3 In a small bowl, whisk lime juice, fish sauce, sesame oil and sugar until sugar dissolves.
  3. 3 of 3 Arrange noodles, roast beef, cucumber, carrot, bell pepper and scallions in 4 bowls; drizzle with dressing. Sprinkle with next 4 ingredients and chile, if using. Serve with lime wedges.
