  1. 1 of 2 Coat 4-quart slow cooker bowl with nonstick cooking spray. Add coconut milk, curry paste, red pepper, lentils, scallions and 3 cups boiling water. Stir to combine.
  2. 2 of 2 Cover and cook on LOW for 4 hours. Season with 1/2 tsp salt. Garnish with cilantro and chopped tomatoes, if you like, and serve over cooked rice stick noodles.
