Thai Shrimp Burger
- 1 of 1 In a food processor, combine 1 lb raw peeled and deveined shrimp, 1/2 cup panko bread crumbs, 1/2 cup each basil, cilantro and grated carrot, 2 tbsp brown sugar and 1 tbsp each fish sauce and lime juice. Process until blended and form into 4 patties. Place on a baking sheet lined with plastic wrap and refrigerate at least 1 hour. Heat grill to medium. In a small bowl, whisk 1/4 cup mayonnaise with 1 tbsp sriracha. (Or serve with jarred sriracha mayo.) Grill burgers 6 minutes per side, until cooked through. Serve on 4 split rolls with sriracha mayo, carrots (cut into ribbons with a vegetable peeler), basil and cilantro.
