  1. 1 of 2 Combine first 8 ingredients in a 4-quart slow cooker. Cover and cook on HIGH for 2 to 2 1/2 hours or LOW for 4 1/2 to 5 hours.
  2. 2 of 2 If cooking on LOW, turn to HIGH. Stir in rice. Cover and cook 10 to 15 minutes, until rice is tender. Stir in coconut milk and cilantro. Sprinkle each serving with cashews.
