  1. 1 of 1 In a large pot, brown 2 lbs ground beef over high for 5 to 7 minutes. Remove to a bowl; drain off fat. Reduce heat to medium and add 1 tbsp canola oil, 1 diced red onion, 1 large diced green pepper and 3 diced cloves garlic. Cook 5 minutes. Add 1/4 cup chili powder and 2 seeded and chopped chipotle chiles in adobo. Cook 2 minutes. Return beef to pot with 1 can (28 oz) fire-roasted crushed tomatoes, 1 cup water and 1/4 cup packed brown sugar. Cover, reduce heat to medium-low and simmer 25 minutes, stirring occasionally. Stir in 2 cans (15 oz each) drained and rinsed beans (your choice) and 3/4 tsp salt. Serve with sour cream and sliced scallions.
