Return beef to pot with 1 can (28 oz) fire-roasted crushed tomatoes, 1 cup water and 1/4 cup packed brown sugar. Cover, reduce heat to medium-low and simmer 25 minutes, stirring occasionally. Stir in 2 cans (15 oz each) drained and rinsed beans (your choice) and 3/4 tsp salt. Serve with sour cream and sliced scallions.
