• Heat oven to 350°. In a small pot, combine first 6 ingredients and bring to a simmer. Cover and remove from heat.

  • Meanwhile, peel potatoes. Using a mandoline, cut into 1/16-inch-thick slices. Layer half the slices in a 13 x 9-inch baking dish. Scatter 1 cup cheese over top. Layer remaining potatoes, pour cream evenly over top and press with a spatula to compress into dish. Scatter 1 cup cheese over top. Bake 45 to 50 minutes, until golden brown, bubbly and knife-tender. Let stand 10 minutes before serving.
