Turkey Sausage and Spinach Orecchiette

  1. 1 of 2 Heat a large nonstick skillet over medium-high. Add 4 sweet Italian turkey sausages, casings removed, 1 cup chopped onion and 2 tbsp chopped garlic; cook 5 minutes, stirring occasionally. Stir in 2 cups sliced sweet red and yellow peppers and 1/2 tsp dried Italian seasoning; cook 5 more minutes, stirring occasionally. Add 1 can (8 oz) no-salt-added tomato sauce and simmer 2 minutes.
  2. 2 of 2 Meanwhile, cook 1 lb, orecchiette per pkg directions (about 10 minutes). Drain, reserving 1 cup cooking water. Gradually stir 1 bag (6 oz) baby spinach into skillet. In pasta pot, combine pasta and sausage sauce, adding some reserved cooking water if needed to loosen sauce. Spoon pasta into a large serving bowl. Top with 1/3 cup shredded Asiago cheese.
