Ground Turkey Stroganoff
In large nonstick skillet, heat oil over medium-high heat. Add onion; saute 5 minutes. Add turkey, breaking it up into pieces, then mushrooms and red pepper; saute until turkey is no longer pink, 10 minutes.Advertisement
In medium-size bowl, whisk together broth, flour, salt, paprika, thyme and pepper. Add to skillet, stirring to combine. Bring to simmering; simmer 3 minutes, stirring occasionally, until thickened.
Reduce heat to low. Stir in sour cream and mustard. Heat gently for 1 to 2 minutes until just heated through; do not let boil.
Meanwhile, in large pot of boiling water, cook noodles following package directions. Drain. Stir parsley into turkey mixture. Serve over noodles.
