• Sauté onion and garlic in oil in large nonstick skillet over medium-high heat until lightly colored, about 5 minutes. Crumble sausage into skillet; sauté, breaking up large pieces with wood spoon, until lightly browned, about 7 minutes.

  • Add broth, water, barley and carrots to sausage mixture; cover; cook over low heat for 10 minutes.

  • Remove cover. Carefully add chopped spinach; replace cover; simmer 8 to 10 minutes or until barley is tender. Makes 4 servings.
