Summery Pitas

  1. 1 of 3 Combine turkey, peach, red pepper and green onion in medium-size bowl.
  2. 2 of 3 Combine yogurt, mint, ginger, salt if using, and black pepper in small food processor or blender. Whirl until well mixed. Pour the yogurt mixture over turkey mixture; toss to combine.
  3. 3 of 3 Slice pitas in half, forming 2 pockets for each. Stuff halves with turkey salad mixture and lettuce, dividing mixture equally. Makes 6 servings.
