Directions

  1. 1 of 1 Line a rimmed baking sheet with parchment. In a small pot, heat 1/2 cup sugar, 1/4 cup water and 1/8 tsp salt over medium for 2 minutes, until sugar is dissolved. Pour over 2 cups old-fashioned rolled oats in a large bowl and stir with a rubber spatula to coat well. Transfer to prepared baking sheet and spread in a single layer. Bake at 325 degrees for 45 minutes, stirring every 15 minutes, until browned and dry. Let cool completely, about 10 minutes. Transfer to a medium bowl and break up any clumps. Roll scoops of ice cream in oats until completely covered. Serve drizzled with chocolate syrup and topped with light whipped topping and sprinkles.
