• Rinse and drain porcini, cover with 2 cups hot water and soak 20 min. Drain again, reserving soaking liquid and soaked mushrooms separately. While porcini soak, mince shallot and clean, trim and chop cremini.

  • In a large stainless skillet over med-high, heat oil. Add shallot and cook about 30 sec. Add cremini and 1/4 tsp salt; cook until well browned, 7 to 8 min.

  • Whisk flour into mushroom mixture and cook well, at least 1 min. Slowly whisk in 1 1/2 cups porcini soaking liquid. Add 1/2 cup soaked porcini (reserve remaining for another purpose, such as pasta sauce). Whisk in thyme, 1/4 tsp salt and pepper to taste. Cook to desired thickness, 3 to 4 min. Adjust seasoning to taste.
